Prosciutto Di Parma - 24 Months
Our Prosciutto di Parma - or "Parma ham" - is made by the Galloni family in Langhirano, Emilia Romagna. The hams are pressed and salted with Sicilian sea salt over a two month period, before being coated in a mixture of rice flour, salt and fat ('sugna') which protects the meat during the curing process.
The final product is delicate and fragrant, melting in the mouth and complimenting a wide variaty of flavours. Prosciutto di Parma is the quintessential Italian cured ham and Galloni's is widely viewed as one of the best in Italy.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
