Gorgonzola Piccante
Gorgonzola is the most famous of Italy's blue cheeses, with our Gorgonzola Naturale being a more mature varient. Ours is made by Latteria di Cameri, a collective of 16 local dairies around Novara, in Lombardy. The cheese is made almost entirely by hand, and is aged for a full 120 days. This results in a much more intense and dominant blue flavour, but also brings out more subtle woody and malty walnut notes.
The texture is compact and smooth, almost reminiscent of goat’s milk cheeses, with a pleasantly light and refreshing flavour.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
